we're starting to work on new features and updates to internals for package ahead of the 2024-25 season.

we should prepare a minor release for v2.1.0

add extended time series data (add extended flu hospitalization time series to package data #219)
add dataset with estimated unreported 2024 weeks (add dataset with estimated NHSN hospitalizations for unreported weeks #220)
update categorical rate trend methods and data (updated categorical rate change thresholds and algorithm for 2024-25 FluSight season #221)
include options for RESP-NET retrieval for Flusurv hospitalizations (use RESP-NET to retrieve FluSurv-NET hospitalization data #214)
fix bug in Fluview Flusurv hospitalization retrieval (fix incorrectly labeled columns in the FluSurv hospitalization data retireval #215)
add functionality to retrieve updated NHSN data stream (functionality to retrieve data from updated NHSN hospital respiratory data stream #225)
review all documentation
add v2.1.0 release notes to changelog
