We currently have SDL-driven interactive UIs in https://github.com/project-chip/connectedhomeip/tree/master/examples/common/imgui_ui/windows

These are generally built with -with-ui variants.

We should make these work with generic DataModel::Provider interfaces and encourage test applications to have functionality available for easy testing of applications on a desktop.
