[Feature] Set defaults for UI / new uploads

Description of the feature you are requesting:
I would like to be able to set defaults on the UI or have it remember between browser sessions, or a way to prune the settings to only allow the options I want.

more customization via env or yml

I've considered editing files to try to customize the UI more.
