Update docs based on my own confusion through the process of getting this started: Which API metrics are currently mapped to a prometheus metric Default port

Added Promethus metrics for Soil Moisture values from the API
Updated a few docs pages from my confusion, including updating the AmbientWeather API list of values with their current Prometheus metric names
