Certificates Expire every 2 months on Right to Know #170

LetsEncrypt Certificates aren't being automatically renewed.

It's not clear why, but the issue happens every 2 months, and there isn't any alerting in place when it does fail. Ideally we need to work out what is causing it, and how to fix it.

A long term fix could be moving from certbot to Cloudflare SSL (which we can do for free). More information in #169
