Update deps to work with the latest pangeo-notebook image #70

As of now, our packages specified in the environment.yml file conflict with the latest version of the pangeo-notebook image.

The temporary solution was to use a version of the image from last year.

Ideally we can update and pin our dependencies to work with the newer version of pangeo-notebook.
