Pin versions for docker images

Describe the bug

Some docker images are failing due to lack of pinned versions. This is a list from SWE-Bench cases (running updated for migrated fixes)

• sphinx-doc__sphinx-11445
• Astropy and xarray fixes princeton-nlp/SWE-bench#184
•  Fix: Issues with yanked pkg types-setuptools princeton-nlp/SWE-bench#232 and Fix fix for yanked packages princeton-nlp/SWE-bench#236

Steps/Code to Reproduce

python -m src.main --predictions_path gold --max_workers 1 --run_id validate-gold --instance_ids <affected_instance>

Should succeed in building

Actual Results

May fail due to missing pin of dependencies

I did attempt to build a golden solution for all astropy instances in SWT-Bench and succeeeded, further all xarray instances are excluded as well, thus can not reproduce the build failures. If anyone encounters issues trying to run the suite, which are related to these issues I am glad to fix them.
