Fix copyright info on Sphinx documentation

We should make sure the copyright information is correct. Looking at Spack's docs, it seems that they have a reference to an institutional copyright rather than an individual.

This is the section that needs to change in order to update the documentation:

dsi/docs/conf.py

	project = 'DSI'
	copyright = '2023, Terry Turton'
	author = 'Terry Turton'
	release = '0.0.0'

This change can happen on the qwofford/issue14 branch .

We should keep the 0.0.0 version for now. Let's target end of FY for a version release?
