The binding generator itself is not dependent on any particular platform, but the xsltproc compilation used in the build system is known not to work on Windows (unhandled). Additionally, the scope of this issue should cover actually getting projects set up and running on other platforms, with instructions for doing so.

Hey! I played around with GTK on Windows for a bit and managed to add Windows support to my template. Unfortunately, I could not get it to compile natively, but cross-compiling from Linux to Windows works pretty well. I hope this is of use for you ^^

Thanks @thetek42, that looks like it'll be a great reference for solving this. The biggest blocker for me solving this issue right now is that I don't use Windows or Mac personally, but at some point I'll need to try it out, and your template will definitely help in getting started.
