What happened?

For newer anemoi-datasets, the variables are ordered by alphabet, which means the pressure level variables are no longer ordered by pressure level.
The PlotLoss callback produces easier-to-understand plots if the variables are ordered by pressure level.

What are the steps to reproduce the bug?

Enable PlotLoss callback.
