Pin codecheck R package version for register rendering

Currently, the Dockerfile at https://github.com/codecheckers/register/blob/master/Dockerfile#L10 installs the latest available version of the codecheck R package.

It should install a specific version so we can more freely work on the R package.

1. The release process/documentation must be updated to add version tags

• maybe use sth. like https://github.com/marketplace/actions/autotag ?
• have a little action that extracts the version from the DESCRIPTION file an then adds a tag.. I cannot imagine nobody did this before! Check first
• check https://r-pkgs.org/lifecycle.html#sec-lifecycle-version-number-tidyverse for useful steps/tools

3. Update the Dockerfile, see https://remotes.r-lib.org/reference/install_github.html
