Make required updates to support AAP 2.5

Need to make sure that product demos deploys and functions on AAP 2.5 deployments

Good news, thanks to the effort of the config-as-code developers, this mostly works! See following steps to reproduce:

• Have a 2.5 AAP deployment
• Follow boostrap steps define for APD (e.g. add project, setup JT, disable collection download)
• Use anupdated EE with the latest infra.controller_config (about to be renamed to infra.aap_configuration) and ansible.controller collections
• Update SETUP JT to use updated EE
• Add controller_dependency_check: false to extra vars in SETUP JT, see meta_dependency_check seemingly not functional when run in Controller redhat-cop/infra.aap_configuration#942
• launch, ignore 2.5 quirks

I have not exhaustively tested the job templates. I am fairly certain at least some of the OpenShift JTs that interact with the platform operator don't work, but at least the SETUP job succeeds for all the categories we have.
