Redo application dist using the Gradle application plugin?

Realized there was such a plugin after pretty much being done doing it the hacky way ...

It is in use in the launcher already

This could also be used as a sort of second pass for polish and stability as the Gradle structure started fraying at the edges when pushing to make the last few things work. For example the dist tasks are somewhat fragile and have to be run in just the right order in Jenkins to truly work
