The LUET_CONFIG var permit to use a custom luet-config.yaml during building of an iso.
Since commit commit, it's broken.
The custom Luet-config.yml is copied in chroot and then overwritten here
cat <<EOF > "$rootfs/luet.yaml"

@geaaru , you change a >> for a >. Is there a reason?
