What percentage of the quests and missions have been mapped?

I am trying to obtain all the dialog in the entire game including but not limited to the dialog used when talking to any NPC as well as any used in quests and missions. Does this server have a mapping to the .dat files for the proper dialog tables and NPCs responsible for those dialogs? Does it include almost all of the mappings? How are these mapping being made?
