To remove or to disable / hide?

Timothée Ravier, the (?) maintainer of Kinoite mentioned that anything suggesting layering by default should be avoided always, as it makes the system less stable and slows down updates drastically.

The process makes updates extremely slow, which is not a huge problem but nonetheless should be avoided whenever possible.

"Debloating" is not really possible on OSTree, as you have to debloat all the time, on every update. It would be better to just remove all .desktop entries, file associations e.g. to make the apps disappear.
