A symbolic implementation of the K-matrix is available since AmpForm v0.11.0. It should now be relatively easy to build a HelicityModel with K-matrix dynamics (or rather, P-vector) from a QRules StateTransitionCollection (single channel).
The difficult part is that the dynamics builder protocol will have to be reconsidered, because that currently works for specific resonances only.
Note that #156 is required for building amplitude models for multiple channels.
